HOW TO MAKE THIS –

- Gradually add the ice-cold water while stirring continuously to form a smooth batter. The batter should be thin and pourable.
- Heat oil or ghee in a deep frying pan or kadai on medium heat.
- Take a round mold with a hollow center (you can use a small steel container or a ghevar mold if available) and dip it in the hot oil or ghee for a few seconds to heat it.
- Carefully lift the mold and place it in the hot oil or ghee. Slowly pour a ladleful of the batter into the mold, allowing it to spread and form a circular shape.
- Fry the ghevar on medium-low heat until it turns golden and crispy. Gently remove the ghevar from the mold and drain the excess oil.
- Prepare the sugar syrup by dissolving sugar in a little water and heating it until it reaches a one-string consistency. Add a pinch of saffron strands for flavor and color.
- Dip the fried ghevar in the sugar syrup for a few seconds, ensuring you coat it well. Remove and let it cool on a wire rack.
- Once cooled, garnish the ghevar with slivered almonds and pistachios.
- You have made homemade ghevar ready to be enjoyed! Serve it as is or with a drizzle of rabri or malai on top.
